I made my very first homemade batch of kombucha tea. Kombucha is a fermented drink and a very healthy essential digestive aid, also known as a superdrink. It's a colony of yeast and bacteria made into a pancake pancake-type shape, made up of beneficial microorganisms. It takes a few weeks to ferment. During the fermentation process, essential nutrients, such as enzymes, probiotics, amino acids, antioxidants and polyphenols form. You make this drink using green tea, black tea and sugar.
I was very happy how it turned out and now I drink a cup a day. I haven't been sick since I've been drinking it. Cheers!
I also just made my first homemade vegan lasagna. So delicious! I made it with spinach, artichokes, mushrooms, tomato sauce, lasagna pasta sheets, and homemade ricotta cheese (made out of soy milk). I love this recipe and will be making it again soon! Keith also enjoyed it and has been excited to be a sampler of my new recipes. :)
This is the third year that Keith and I are teaching English overseas and traveling the world. We are still on Jeju Island, but we are teaching at an American boarding international school this year (KIS), about an hour away from our old home. I hope my blog, pictures, and videos help you learn about South Korea, the Korean people and their culture. I also hope to have this blog in order to keep in touch with the friends and family who I love and miss so much back in Chicago!

Jeju Fire Festival 2012
We finally made it to the annual and International Jeju Fire Festival! It was an incredible event. Lighting the fire of this particular mountain is a tradition for the Korean culture, in which they are preparing for harvesting of the new season. Also, it's a way to get rid of all evil spirits and start the new year fresh.
There were many performances (singers, dancers) on stage, many tents set up with snacks...corn on the cob, corndogs, sweet potatoes, korean food, and drinks...Soju, Makeli, Maekju (beer), coffee, along with little Jeju souvenirs.
We saw so many of our friends at the festival and was able to get right up near the fire, which kept us cozy and warm. After the festival, we went to a friend's apartment, where a mini concert was happening. There are so many talented musicians on Jeju. From the concert, we made it to city hall and met up for Cassie's going away party at Island Stone. The owner there gave us shots on the house because we haven't been there for so long. It was great to see so many wonderful people this weekend, get off campus, and also enjoy a tradition of the Korean culture. Cheers! What a night!
